Ingredients
- Eggplant: 2 pieces (large size, cut into slices)
- Pizza sauce: a cup
- Cheese: 20 slices (light)
- Cherry tomatoes: a cup (sliced)
- Spinach: a cup (chopped)
- Salt: half a teaspoon
- Black pepper: half a teaspoon
- Oregano: a teaspoon
How to prepare
- Preheat the oven and prepare a tray greased with a little oil. Arrange the eggplant pieces, sprinkle them with salt, and grill the eggplant for 20 minutes.
- Spread a teaspoon of pizza sauce on each eggplant slice and piece of light cheese.
- Sprinkle an amount of spinach, black pepper, tomatoes, and a pinch of oregano on each slice.
- Return the tray to the grill for 5 minutes until it browns and the cheese melts, and serve hot.
